Ingredients
  • 3/4cup unsalted butter, softened
  • 1 1/4cup brown sugar
  • 1large egg yolk
  • 1/3cup Brown Ale(we used New English Brewing Co. Brewers Special Brown Ale)
  • 1/2teaspoon vanilla
  • 1 1/4cup all-purpose flour
  • 1cup bread flour(adds fluffiness to the cookies)
  • 1 1/4teaspoon baking soda
  • 1teaspoon baking powder
  • 1/2teaspoon salt
  • 1teaspoon cornstarch
  • 1/4teaspoon cinnamon(we say an tad extra doesn’t hurt!)
Instructions
  1. Preheat oven to 325 degrees.
  2. Put all wet ingredients, vanilla, unsalted butter, brown sugar, egg yolk, and brown ale, into a stand mixer (if you don’t have one you can mix by hand, but do it well; don’t be surprised if beer doesn’t mix completely).
  3. Then add dry ingredients, one by one, all-purpose flour, bread flour, baking soda, baking powder, salt, cornstarch, and cinnamon. Keep stirring on low or consistently by hand as each ingredient goes in.
  4. Prepare baking sheets by spraying with non-stick cooking spray, covering with parchment paper or using anti-stick cooking pad.
  5. Scoop out dough using a spoon. You can make them any size, but a tablespoon size makes for a good cooking size so that they won’t take too long or over cook. Keep an eye on them and time as necessary.
