Chocolate Chip Stout Cookies

August 4th is #NationalChocolateChipCookieDay and we are excited to be celebrating with these delicious chocolate chip stout cookies! These cookies have a little bit of beer baked into the cookie dough. And, after they were all done we dipped them into a chocolate stout frosting. YUM! This twist on the classic chocolate chip cookie is subtle but amazing. We hope you enjoy them as much as we did!

The Beer

We explored the supermarket for a stout beer. Initially, we thought we were going to use a regular chocolate stout but after browsing for a couple of minutes we stumbled upon Mother Earth Brewing Co‘s Sin Tax. We were definitely excited to see this San Diego beer in Atlanta, GA! This peanut butter stout is so rich we knew it would contrast the sweetness of the cookie and the chocolate perfectly. As an added bonus, this beer also pairs extremely nicely with the cookies!

Chocolate Chip Stout Cookies

Cookies
  • 1 cup butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoon baking powder
  • 4 tablespoons stout beer
  • 1/2 teaspoon salt
  • 3 cups all-purpose flour
  • 2 cups semisweet chocolate chips
Frosting
  • 1/2 cup whipping cream
  • 2 tablespoons butter
  • 5 ounces semi-sweet chocolate chips
  • 2 tablespoons stout beer

Frosting
  • 1/2 cup whipping cream
  • 2 tablespoons butter
  • 5 ounces semi-sweet chocolate chips
  • 2 tablespoons stout beer
Instructions
Cookies
  1. Preheat oven to 350 degrees.
  2. Cream together the butter, white sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Dissolve baking soda in beer. Add to batter along with salt.
  5. Stir in flour and chocolate chips.
  6. Drop by large spoonfuls onto un-greased pans.
  7. Bake for about 10 minutes or edges are nicely browned.
Frosting
  1. In a saucepan heat whipping cream and 2 tablespoons of butter to a boil.
  2. Remove from heat and stir in chocolate until melted and smooth.
  3. Stir in 4 tablespoons beer.
  4. Pour into bowl, cover and refrigerate until chocolate is firm.
  5. Dip chocolate chip cookies into chocolate and enjoy!
